Ingredients

Scale

Dough:

  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons brown sugar
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon vanilla extract
  • 1 egg yolk
  • 3 tablespoons all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • 1/8 teaspoon baking soda
  • Pinch of salt
  • 2 tablespoons semisweet chocolate chips

Topping (optional):

  • 1 tablespoon mini chocolate chips

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C).
  2. Mix the dough: In a small bowl, combine melted butter, brown sugar, and granulated sugar. Add egg yolk and vanilla extract. Mix in flour, cocoa powder, baking soda, and salt until a thick dough forms. Fold in semisweet chocolate chips.
  3. Prepare for baking: Transfer the dough to a greased 6-ounce ramekin or small oven-safe dish, smoothing the top. Optionally, sprinkle mini chocolate chips on top.
  4. Bake: Bake for 13–15 minutes until the top is set but the center is slightly soft.
  5. Cool and serve: Allow to cool for 5 minutes before enjoying your warm Brookie for One.

Notes

  • For a more fudgy texture, slightly underbake the Brookie and pair it with a scoop of vanilla ice cream.
  • If short on time, microwave for 45–60 seconds, but note that the texture may differ.
