Potatoes:

  • 4 large russet potatoes, scrubbed
  • 1 tablespoon olive oil

Cheese Sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Broccoli:

  • 2 cups fresh broccoli florets, steamed

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C).
  2. Bake Potatoes: Rub potatoes with olive oil, prick with a fork, and bake directly on the oven rack for 50-60 minutes until tender.
  3. Make Cheese Sauce: In a saucepan over medium heat, melt butter, whisk in flour to form a roux, slowly add milk while whisking until thickened. Stir in cheddar cheese, garlic powder, salt, and black pepper until smooth.
  4. Steam Broccoli: Steam broccoli until tender but still bright green.
