For the chicken:
4 boneless skinless chicken breasts
1 tablespoon olive oil
For the filling:
1cup finely chopped broccoli (fresh or thawed from frozen)
3/4cup shredded sharp cheddar cheese
2 tablespoons cream cheese (softened)
1 clove garlic (minced)
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat the oven: Preheat the oven to 375°F.
Prepare the filling: In a small bowl, mix together broccoli, cheddar cheese, cream cheese, garlic, onion powder, salt, and pepper.
Prepare the chicken: Slice a pocket into the side of each chicken breast. Stuff each pocket with the broccoli cheese mixture, secure with toothpicks if needed.
Season and cook: Rub the outside of each chicken breast with olive oil and sprinkle with paprika. Sear the chicken in an oven-safe skillet until golden brown. Transfer the skillet to the oven and bake until the chicken reaches 165°F.
Serve: Remove toothpicks before serving.
Notes
If you don’t have an oven-safe skillet, transfer the seared chicken to a baking dish before baking.
You can steam the broccoli slightly before mixing if you prefer a softer texture.
