For the filling:

  • 1 cup finely chopped broccoli (fresh or thawed from frozen)
  • 3/4 cup shredded sharp cheddar cheese
  • 2 tablespoons cream cheese (softened)
  • 1 clove garlic (minced)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Prepare the filling: In a small bowl, mix together broccoli, cheddar cheese, cream cheese, garlic, onion powder, salt, and pepper.
  3. Prepare the chicken: Slice a pocket into the side of each chicken breast. Stuff each pocket with the broccoli cheese mixture, secure with toothpicks if needed.
  4. Season and cook: Rub the outside of each chicken breast with olive oil and sprinkle with paprika. Sear the chicken in an oven-safe skillet until golden brown. Transfer the skillet to the oven and bake until the chicken reaches 165°F.
  5. Serve: Remove toothpicks before serving.
