Broccoli Cheddar Mac and Cheese with Chicken Recipe

A creamy and comforting dish combining classic mac and cheese with tender chicken, broccoli, and sharp cheddar for a wholesome twist.

  • 2 cups elbow macaroni
  • 2 cups broccoli florets
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups cooked, shredded or diced chicken breast
  • 1 tablespoon olive oil (optional, for reheating chicken)

Instructions

  1. Cook macaroni according to package instructions. In the last 2 minutes of cooking, add broccoli florets. Drain and set aside.
  2. In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to form a roux.
  3. Gradually whisk in milk and cook until thickened, about 3–5 minutes.
  4. Stir in cheddar cheese, garlic powder, salt, and pepper. Mix until cheese is melted and sauce is smooth.
  5. Add the cooked chicken, macaroni, and broccoli to the cheese sauce. Stir to combine and heat through.
  6. Serve hot and enjoy!

Notes

  • You can use rotisserie chicken for convenience.
  • Substitute whole wheat or gluten-free pasta as needed.
  • Add a pinch of paprika or cayenne for a spicy kick.
