1 package puff pastry sheets, thawed

Instructions
Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare brisket filling: Stir in the shredded brisket, tomato paste, smoked paprika, black pepper, salt, and cayenne if using. Pour in the beef broth and cook until thickened, about 5–7 minutes. Cool slightly.
Assemble pies: Roll out puff pastry sheets and cut into squares. Spoon brisket mixture onto each square, top with smoked cheese, fold over, and seal. Brush with beaten egg.
