These delicious Breakfast Rolls are a perfect savory option for a morning treat. Filled with eggs, bacon or sausage, and cheese, these rolls are easy to make and can even be prepared ahead of time for a convenient breakfast option.

Dough:

  • 1 pound refrigerated crescent roll or pizza dough

Filling:

  • 4 large eggs, scrambled
  • 6 slices cooked bacon or 4 sausage links, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • 1 tablespoon butter, melted

Instructions

  1. Preheat the oven and prepare the dough: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper. Roll out the dough on a floured surface into a large rectangle.
  2. Assemble the filling: Spread the scrambled eggs, bacon or sausage, cheddar cheese, and green onions over the dough. Season with salt and pepper.
  3. Roll and cut the dough: Roll the dough into a log, slice into pieces, and place them on the baking sheet.
  4. Bake the rolls: Brush the tops with melted butter and bake for 18–22 minutes until golden brown.
  5. Serve: Let the rolls cool slightly before serving.

Notes

  • To make ahead, assemble and refrigerate the unbaked rolls overnight. Bake in the morning.
