Breakfast Protein Biscuits with Ham and Cheddar Recipe

Hearty and protein-packed breakfast biscuits loaded with ham and cheddar, perfect for a quick morning meal or on-the-go snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 4 tbsp cold unsalted butter, cubed
  • 1 cup plain Greek yogurt
  • 2 large eggs
  • 1 cup chopped cooked ham
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped chives or green onions (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, pepper, and garlic powder.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. In a separate bowl, mix Greek yogurt and eggs until smooth.
  5. Add the wet mixture to the dry ingredients and stir until just combined.
  6. Fold in the chopped ham, cheddar cheese, and chives or green onions.
  7. Drop 1/4 cup portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 15–18 minutes, or until golden brown and cooked through.
  9. Let cool slightly before serving.

Notes

  • You can substitute turkey or bacon for ham.
  • Use low-fat Greek yogurt to reduce calories and fat content.
  • Store leftovers in the fridge for up to 4 days or freeze for longer storage.
