For the Chicken:

  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Orzo:

  • 1 cup orzo pasta
  • 2 cups low-sodium chicken broth
  • 1/2 cup water

Additional Ingredients:

  • 1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach, roughly chopped
  • Optional: fresh parsley or lemon zest for garnish

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet, season chicken, and cook until browned. Set aside.
  2. Cook the Orzo: In the same skillet, toast orzo, add broth and water, simmer until tender.
  3. Finish the Dish: Stir in Boursin and Parmesan until creamy, add spinach and chicken. Serve warm.

Notes

  • You can use rotisserie chicken to save time.
  • For added brightness, squeeze in a little lemon juice before serving.
  • Substitute kale or arugula for spinach if preferred.
