Blueberry Layer:

  • 2 cups fresh or frozen blueberries
  • 2 teaspoons cornstarch
  • 2 tablespoons lemon juice
  • 2 tablespoons granulated sugar

Additional:

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Making the Cookie Base: In a large bowl, cream together the butter, granulated sugar, and brown sugar. Beat in the eggs and vanilla. In a separate bowl, whisk together the flour, baking powder, and salt. Combine wet and dry ingredients to form a dough. Press two-thirds of the dough into the pan.
  3. Preparing the Blueberry Layer: Toss blueberries with cornstarch, lemon juice, and sugar. Spread over the dough in the pan.
  4. Adding the Topping: Crumble the remaining dough over the blueberries.
  5. Baking: Bake for 35–40 minutes until golden and bubbly. Let cool before cutting into bars. Dust with powdered sugar if desired.
