Wet Ingredients:

  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 2 cups fresh or frozen blueberries
  • 2 Tbsp honey or maple syrup
  • 1 Tbsp cornstarch
  • 1 Tbsp lemon juice

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Mix Ingredients: In a large bowl, combine oats, flour, brown sugar, baking powder, cinnamon, and salt. Stir in melted butter and vanilla until crumbly. Press most of the mixture into the pan to form a crust.
  3. Prepare Blueberry Layer: In another bowl, mix blueberries, honey/maple syrup, cornstarch, and lemon juice. Spread over the crust.
  4. Add Topping: Sprinkle reserved oat mixture on top.
  5. Bake: Bake for 35-40 minutes until golden and bubbly. Cool before cutting into bars.
