Ingredients

Units Scale

For the Cookies:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen blueberries (if using frozen, do not thaw)
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugar: In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, lemon juice, and lemon zest until well combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  4. Add Blueberries and Chocolate: Gently fold in the blueberries and white chocolate chips, if using.
  5. Bake: Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10–12 minutes, or until the edges are lightly golden and the centers are set.
  6. Cool and Serve: Let cool on the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra lemon flavor, drizzle cooled cookies with a simple lemon glaze made from powdered sugar and lemon juice.
  • Store in an airtight container at room temperature for up to 3 days.
