For the crust:

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 12 tablespoons ice water

For the ganache filling:

  • 8 ounces semisweet chocolate, chopped
  • 3/4 cup heavy cream
  • 1 teaspoon vanilla extract

For the topping:

  • 1 1/2 cups fresh blueberries
  • powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C).
  2. Make the crust: In a food processor, pulse flour and powdered sugar. Add cold butter and pulse. Add egg yolk and pulse, adding ice water as needed. Press dough into a tart pan, chill, then bake until golden.
  3. Prepare the ganache: Heat cream until simmering, pour over chocolate, let sit, then stir in vanilla. Pour into the cooled tart shell and refrigerate until set.
  4. Finish with blueberries: Before serving, top the ganache with fresh blueberries. Dust with powdered sugar if desired.
