1cup fresh or frozen blueberries
1/2cup granulated sugar
1/2cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
1 1/2cups all-purpose flour
1 teaspoon baking powder

1/2cup powdered sugar for rolling
Instructions
Preheat oven and prepare baking sheet: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Prepare blueberry puree: Heat blueberries until they burst, then mash into a puree. Allow to cool.
Make cookie dough: Cream butter and sugar, then add egg, vanilla, and blueberry puree. In a separate bowl, whisk flour, baking powder, and salt. Combine wet and dry ingredients.
Chill dough: Refrigerate dough for 30–45 minutes.
Shape and coat cookies: Scoop dough, roll into balls, and coat in powdered sugar.
