  • 1/2 cup unsalted butter (softened)
  • 4 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

Additional:

  • 1 cup fresh or frozen blueberries (if frozen, do not thaw)
  • 1 tablespoon all-purpose flour (for coating blueberries)

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together 1 ¾ cups flour, baking powder, baking soda, and salt; set aside.
  3. Cream Butter and Cream Cheese: In a large bowl, beat butter and cream cheese until smooth. Add sugar and beat until light and fluffy.
  4. Combine Wet Ingredients: Mix in eggs one at a time, then add vanilla and sour cream, stirring until combined.
  5. Combine Dry and Wet Mixtures: Gradually add dry ingredients to the wet mixture, stirring until just combined.
  6. Add Blueberries: Toss blueberries with 1 tablespoon of flour, then gently fold into the batter.
  7. Bake: Pour batter into loaf pan, smooth the top, and bake for 55–65 minutes until a toothpick inserted comes out clean.
  8. Cool and Serve: Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
