- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 6 slices bacon, cooked and crumbled
- 1 cup chopped romaine or iceberg lettuce
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp apple cider vinegar
- 1 tsp garlic powder
- Salt and pepper to taste
- 1/4 cup chopped green onions (optional)
Instructions
- Cook pasta according to package instructions, then drain and rinse under cold water. Set aside.
- In a small bowl, mix mayonnaise, sour cream, apple cider vinegar, garlic powder, salt, and pepper to make the dressing.
- In a large mixing bowl, combine cooked pasta, cherry tomatoes, bacon, lettuce, and green onions if using.
- Pour the dressing over the salad and gently toss to combine.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
- Serve chilled and enjoy!
