Description

This BLT Pasta Salad combines crispy bacon, juicy tomatoes, crunchy lettuce, and tender pasta in a creamy dressing, making it a perfect side dish for summer gatherings or a hearty lunch.


Ingredients

  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 6 slices bacon, cooked and crumbled
  • 1 cup chopped romaine or iceberg lettuce
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped green onions (optional)

Instructions

  1. Cook pasta according to package instructions, then drain and rinse under cold water. Set aside.
  2. In a small bowl, mix mayonnaise, sour cream, apple cider vinegar, garlic powder, salt, and pepper to make the dressing.
  3. In a large mixing bowl, combine cooked pasta, cherry tomatoes, bacon, lettuce, and green onions if using.
  4. Pour the dressing over the salad and gently toss to combine.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
  6. Serve chilled and enjoy!
