Black Bean Tacos Recipe

Quick and delicious black bean tacos made with simple ingredients, perfect for a vegetarian meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1 can (15 oz) black beans, drained and rinsed
  • Salt and pepper, to taste
  • 8 small corn tortillas
  • 1/2 cup crumbled feta or cotija cheese (optional)
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced
  • Lime wedges, for serving

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced onion and cook until soft, about 3-4 minutes.
  2. Add garlic, cumin, chili powder, and smoked paprika. Cook for another 1-2 minutes until fragrant.
  3. Stir in black beans and cook for 5 minutes, mashing some of the beans with the back of a spoon. Season with salt and pepper.
  4. Warm the tortillas in a dry skillet or microwave until pliable.
  5. Spoon the black bean mixture into each tortilla.
  6. Top with cheese (if using), lettuce, tomatoes, cilantro, and avocado.
  7. Serve immediately with lime wedges on the side.

Notes

  • Use vegan cheese or omit cheese for a fully vegan version.
  • You can add hot sauce or salsa for extra flavor.
  • Leftover bean mixture can be stored in the fridge for up to 3 days.
