For the Broth:
4lbs beef bones
1 onion, quartered
6 garlic cloves
2 bay leaves
1 tbsp whole black peppercorns
2 tsp cumin seeds
2 tsp dried oregano
4 dried guajillo chilies
4 dried ancho chilies
1 cinnamon stick
Salt, to taste
For Serving:
Chopped cilantro
Diced onion
Lime wedges
Warm corn tortillas
Instructions
Prepare the Broth: In a large pot, combine beef bones, onion, garlic, bay leaves, peppercorns, cumin seeds, oregano, chilies, and cinnamon stick. Add enough water to cover the ingredients. Season with salt.
Simmer: Bring the mixture to a boil, then reduce heat and simmer, partially covered, for about 4-5 hours until the flavors meld and the broth is rich.
Strain: Remove the solids from the broth using a fine mesh strainer, pressing to extract all the flavorful liquid.
Serve: Ladle the hot broth into bowls and garnish with chopped cilantro, diced onion, and a squeeze of fresh lime juice. Serve with warm corn tortillas on the side.
Notes
This broth can also be used as a base for Birria stew or enjoyed on its own as a comforting soup.
Adjust the level of spiciness by adding more or fewer chilies to suit your taste preferences.
