For the Cake:
1 box white cake mix
1 (3-ounce) box strawberry-flavored gelatin
1/2cup whole milk
1/2cup vegetable oil
4 large eggs
1cup mashed fresh strawberries
1/2 teaspoon vanilla extract
For the Frosting:
1/2cup unsalted butter (softened)
8ounces cream cheese (softened)
1/4cup pureed strawberries
1 teaspoon vanilla extract
4cups powdered sugar
Instructions
Preheat the oven: Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and line the bottoms with parchment paper.
Mix the cake batter: In a large bowl, combine the cake mix, strawberry gelatin, milk, oil, eggs, mashed strawberries, and vanilla extract. Beat with an electric mixer on medium speed for 2–3 minutes, until smooth and well combined.
Bake the cakes: Divide the batter evenly between the prepared pans. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
Prepare the frosting: Beat the butter and cream cheese until smooth and creamy. Add in the pureed strawberries and vanilla, then gradually mix in the powdered sugar until the frosting is fluffy and spreadable.
Frost the cake: Frost the cooled cake layers and decorate as desired.
Notes
For stronger strawberry flavor, add 1/2 teaspoon of strawberry extract to the cake batter.
This cake is best stored in the refrigerator and tastes even better the next day.
