Ingredients

Units Scale

Fresh Peach Mixture:

  • 6 fresh peaches (peeled, pitted, and sliced, about 6 cups)
  • 3/4 cup granulated sugar (divided)
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon lemon juice

Batter:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter (melted)
  • 3/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Prepare the peach mixture: In a large mixing bowl, combine the sliced peaches, 1/2 cup granulated sugar, brown sugar, cinnamon, and lemon juice. Stir gently and set aside.
  3. Make the batter: In a separate bowl, whisk together the flour, remaining 1/4 cup granulated sugar, baking powder, and salt. Stir in the melted butter, milk, and vanilla extract until a smooth batter forms.
  4. Assemble and bake: Pour the batter into a greased 9×9-inch or similar-sized baking dish. Spoon the peach mixture evenly over the batter—do not stir. Bake for 40–45 minutes or until the top is golden brown and a toothpick inserted into the batter comes out clean.
  5. Serve: Let cool slightly before serving.

Notes

  • For added flavor, sprinkle the top with a little cinnamon sugar before baking.
  • This cobbler is delicious served warm with a scoop of vanilla ice cream or whipped cream.
