Dry Ingredients:
1 1/2cups all-purpose flour
3 1/2 teaspoons baking powder
1 tablespoon granulated sugar
1/2 teaspoon salt
Wet Ingredients:
1 1/4cups milk
1 large egg
3 tablespoons melted butter
1 teaspoon vanilla extract
Instructions
Prepare Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
Mix Wet Ingredients: In a separate bowl, beat the milk, egg, melted butter, and vanilla extract until combined. Pour the wet ingredients into the dry ingredients and stir just until no large lumps remain—do not overmix.
Rest the Batter: Let the batter rest for 5–10 minutes to help the pancakes rise.
Cook Pancakes: Heat a lightly greased nonstick skillet or griddle over medium heat. Pour ¼ cup of batter for each pancake onto the skillet and cook for 2–3 minutes, until bubbles form on the surface and the edges begin to look set. Flip and cook the other side for 1–2 minutes or until golden brown and cooked through.
Serve: Serve warm with butter, syrup, or your favorite toppings.
Notes
For extra fluffy pancakes, substitute half of the milk with buttermilk or add an extra egg yolk.
Batter can be made ahead and stored in the fridge for up to 24 hours.
