2cups grated zucchini (about 2 medium)
1 1/2cups granulated sugar
2 large eggs
1/2cup vegetable oil
1/4cup unsweetened applesauce
1 teaspoon vanilla extract
2cups all-purpose flour
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2cup chopped walnuts or pecans (optional)
Instructions
Preheat the oven and prepare pan: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
Mix wet ingredients: In a large bowl, whisk together sugar, eggs, oil, applesauce, and vanilla until smooth. Stir in grated zucchini.
Combine dry ingredients: In another bowl, whisk flour, cinnamon, nutmeg, baking soda, baking powder, and salt. Gradually add to wet mixture.
