- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup cooked white rice
- 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
- 1 (8 oz) can tomato sauce
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1 1/2 cups shredded cheddar or Mexican blend cheese
- 1/2 tsp chili powder (optional for extra heat)
- Salt and pepper to taste
- Fresh cilantro and sour cream for topping (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet, cook ground beef with chopped onion over medium heat until browned. Drain excess fat.
- Add garlic, taco seasoning, chili powder (if using), diced tomatoes with green chilies, tomato sauce, and black beans. Simmer for 5–7 minutes, stirring occasionally.
- Stir in the cooked rice and mix well to combine.
- Spread the mixture evenly into the prepared baking dish.
- Top with shredded cheese.
- Bake uncovered for 20–25 minutes, until cheese is melted and bubbly.
- Remove from oven, let cool slightly, and garnish with chopped cilantro and a dollop of sour cream if desired.
Notes
- For a spicier version, add diced jalapeños or hot sauce to the beef mixture.
- Can be made ahead and refrigerated before baking.
