  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup cooked white rice
  • 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
  • 1 (8 oz) can tomato sauce
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 1/2 tsp chili powder (optional for extra heat)
  • Salt and pepper to taste
  • Fresh cilantro and sour cream for topping (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet, cook ground beef with chopped onion over medium heat until browned. Drain excess fat.
  3. Add garlic, taco seasoning, chili powder (if using), diced tomatoes with green chilies, tomato sauce, and black beans. Simmer for 5–7 minutes, stirring occasionally.
  4. Stir in the cooked rice and mix well to combine.
