1 small red onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 can (15 oz) chickpeas, drained and rinsed
1cup cooked quinoa or brown rice
2cups baby spinach
1 1/2 tsp berbere spice blend
1/2 tsp salt
1/4 tsp black pepper
Additional:
1/4cup plain Greek yogurt (optional)

Instructions
Heat olive oil: In a large skillet over medium heat.
Cook onion: Add and cook until softened.
Saute garlic and bell pepper: Cook for 2 minutes.
Add chickpeas and spices: Cook until fragrant.
Stir in spinach: Cook until wilted.
Assemble: Divide into bowls, add yogurt if desired, and serve with lemon wedges.
Notes
For extra texture, roast the chickpeas before adding them to the skillet.
