Description

This Beefy Melt Burrito is a hearty and cheesy meal featuring seasoned ground beef, refried beans, and a blend of cheddar and Monterey Jack cheeses all wrapped in warm flour tortillas. Baked to perfection, these burritos offer a deliciously melty and savory experience, perfect for a satisfying lunch or dinner.

Ingredients

Scale

Meat and Seasoning

  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste

Beans and Cheese

  • 1 cup refried beans
  • 1 cup shredded cheddar cheese (divided)
  • 1 cup shredded Monterey Jack cheese (divided)

Other Ingredients

  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1/2 cup sour cream (for serving)
  • 1/2 cup salsa (for serving)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Sauté aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-5 minutes.
  2. Cook the beef: Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned and fully cooked, about 8-10 minutes. Drain excess grease as needed.
  3. Season the meat: Stir in taco seasoning and mix well. Add salt and pepper to taste. Cook for another 2 minutes to meld flavors.
  4. Prepare bean-cheese mixture: In a separate bowl, combine refried beans with half of the shredded cheddar and Monterey Jack cheese. This blend helps bind the filling.
  5. Assemble burritos: Lay out each tortilla on a flat surface. Spread a generous amount of the bean-cheese mixture in the center of each.
  6. Add beef filling: Spoon a portion of the seasoned ground beef over the beans evenly across all tortillas.
  7. Top with cheese: Sprinkle the remaining cheddar and Monterey Jack cheese on top of the beef for a melty finish.
  8. Roll burritos: Fold the sides of each tortilla inward, then roll it up from the bottom to secure the filling inside. Repeat for all burritos.
  9. Preheat oven: Set your oven to 375°F (190°C).
  10. Bake burritos: Place the rolled burritos seam-side down in a baking dish. Cover with aluminum foil and bake for 15 minutes.
  11. Finish baking: Remove the foil and bake for an additional 10 minutes until the tops are golden and bubbly.
  12. Cool and serve: Let the burritos cool for a few minutes before serving. Serve with sour cream and salsa on the side, garnished with fresh cilantro if desired.

Notes

  • You can substitute flour tortillas with whole wheat or gluten-free tortillas for dietary preferences.
  • Adjust the amount of taco seasoning or add chili flakes for extra spice.
  • Optional: Add chopped fresh jalapeños inside the burritos for a spicy kick.
  • Leftover burritos can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
  • To make it vegetarian, replace ground beef with cooked lentils or plant-based meat alternatives.
