Beef Tips:

  • 1 1/2 pounds beef stew meat or sirloin tips, cut into 1-inch pieces
  • 2 tablespoons olive oil

Gravy:

  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water

To Serve:

  • 3 cups cooked white rice

Instructions

  1. Sear Beef: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the beef tips in batches and sear until browned on all sides. Remove the beef and set aside.
  2. Cook Aromatics: In the same pan, add the chopped onion and cook until softened, about 3–4 minutes. Add the garlic and cook for 1 minute more.
  3. Simmer: Return the beef to the pan and stir in the beef broth, Worcestershire sauce, soy sauce, thyme, salt, and pepper. Bring to a simmer, then reduce the heat to low, cover, and cook for 45–60 minutes, or until the beef is tender.
  4. Thicken Gravy: Stir in the cornstarch slurry and cook uncovered for 5–10 minutes, or until the gravy thickens.
  5. Serve: Serve the beef and gravy over hot cooked rice.

Notes

  • You can use mushrooms or bell peppers for added flavor and texture.
  • For a richer taste, substitute half of the broth with red wine.
