Ingredients

Scale

Beef Tenderloin:

  • 1 whole beef tenderloin (about 45 pounds, trimmed and tied)

Herb Rub:

  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper

Finishing:

  • 2 tablespoons unsalted butter

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F (220°C).
  2. Prepare the Beef: Pat dry the beef tenderloin and place it on a baking sheet or roasting pan.
  3. Create the Herb Rub: In a small bowl, combine olive oil, garlic, rosemary, thyme, salt, and pepper to create a paste. Rub the mixture evenly over the beef.
  4. Sear the Beef: Heat a large oven-safe skillet over medium-high heat, sear the tenderloin on all sides for 2–3 minutes per side until browned.
  5. Roast the Beef: Transfer the skillet or tenderloin to the oven and roast for 20–25 minutes for medium-rare, or until a meat thermometer reads 130°F (54°C) when inserted into the thickest part.
  6. Rest and Serve: Remove from the oven, tent loosely with foil, and let rest for 15 minutes before slicing. Top with unsalted butter just before serving.

Notes

  • For added flavor, consider wrapping the tenderloin in prosciutto before roasting.
  • Always allow the meat to rest before slicing to retain juices.
  • Adjust cooking time based on desired doneness.
