  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz cremini or white mushrooms, sliced
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 cup sour cream
  • Salt and black pepper to taste

For Serving:

  • 12 oz wide egg noodles, cooked and drained
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Prepare the Beef: Heat 1 tablespoon of olive oil in a large skillet. Sear beef strips until browned but not fully cooked. Set aside.
  2. Sauté Aromatics: In the same skillet, sauté onion until softened, then add garlic and cook. Add mushrooms and cook until browned.
  3. Make the Sauce: Sprinkle flour over mushrooms, then pour in beef broth. Add Worcestershire sauce and Dijon mustard. Simmer until thickened.
  4. Finish the Dish: Return beef to the skillet, cook briefly, then remove from heat. Stir in sour cream and season.
  5. Serve: Spoon over cooked egg noodles and garnish with parsley.
