Pancake Batter:
1cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4cup buttermilk
1 large egg
1 teaspoon vanilla extract

Additional:
12 fully cooked beef breakfast sausage links, cut in half
Nonstick cooking spray or oil for greasing

Instructions
Preheat Oven: Preheat oven to 375°F (190°C) and grease a mini muffin pan.
Prepare Batter: Mix dry ingredients in one bowl and wet ingredients in another. Combine wet into dry, mix until just combined.
Fill Mini Muffin Cups: Spoon batter into cups, add a sausage half into each, and bake for 12–15 minutes until golden.
Serve: Let cool slightly and serve warm with maple syrup.
