Beef Enchiladas Recipe

Flavorful and cheesy beef enchiladas made with seasoned ground beef, enchilada sauce, and melted cheese wrapped in soft tortillas—perfect for a hearty and comforting meal.

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 can (10 oz) red enchilada sauce
  • 8 small flour or corn tortillas
  • 2 cups shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add diced onion and cook until soft, about 3-4 minutes.
  3. Add garlic and ground beef. Cook until beef is browned, breaking it up with a spoon, about 6-8 minutes.
  4. Stir in cumin, chili powder, paprika, salt, and pepper. Cook for another 2 minutes. Remove from heat.
  5. Spread a thin layer of enchilada sauce in the bottom of a 9×13-inch baking dish.
  6. Fill each tortilla with the beef mixture and a sprinkle of cheese. Roll up and place seam-side down in the baking dish.
  7. Pour remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
  8. Bake for 20-25 minutes, or until cheese is melted and bubbly.
  9. Garnish with chopped cilantro if desired and serve hot.

Notes

  • Use corn tortillas for a more traditional texture and flavor.
  • Add jalapeños or green chilies for extra heat.
  • Can be made ahead and refrigerated before baking.
