1 small onion, diced
2 cloves garlic, minced
1 tsp ground cumin
1 tsp chili powder
1/2 tsp paprika
Salt and pepper to taste
1 can (10 oz) red enchilada sauce
8 small flour or corn tortillas
2cups shredded cheddar cheese
1/4cup chopped fresh cilantro (optional)
1 tbsp olive oil
Instructions
Preheat the oven to 375°F (190°C).
Heat olive oil in a skillet over medium heat. Add diced onion and cook until soft, about 3-4 minutes.
Add garlic and ground beef. Cook until beef is browned, breaking it up with a spoon, about 6-8 minutes.
Stir in cumin, chili powder, paprika, salt, and pepper. Cook for another 2 minutes. Remove from heat.
Spread a thin layer of enchilada sauce in the bottom of a 9×13-inch baking dish.
Fill each tortilla with the beef mixture and a sprinkle of cheese. Roll up and place seam-side down in the baking dish.
Pour remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
Bake for 20-25 minutes, or until cheese is melted and bubbly.
Garnish with chopped cilantro if desired and serve hot.
Notes
Use corn tortillas for a more traditional texture and flavor.
