For the Beef Filling:

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 1 (10-ounce) can red enchilada sauce
  • 1/2 cup tomato sauce
  • 1 (4-ounce) can diced green chiles (optional)
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 flour tortillas (8-inch)
  • Fresh cilantro, sour cream, or sliced jalapeños for garnish

Instructions

  1. Preheat the Oven: Preheat oven to 375°F (190°C).
  2. Cook the Beef: In a skillet, cook onion and garlic, then add ground beef and seasonings. Stir in enchilada sauce, tomato sauce, and green chiles, if using. Simmer.
  3. Assemble: Spread enchilada sauce in a baking dish. Fill tortillas with beef mixture, cheese, roll up, and place in the dish.
  4. Bake: Pour remaining sauce over the top, sprinkle with cheese, and bake for 20–25 minutes.
  5. Serve: Garnish with cilantro, sour cream, or jalapeños.

Notes

  • You can use corn tortillas for a more traditional version.
  • For spicier enchiladas, add cayenne or use hot enchilada sauce.
