1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1pound ground beef
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon salt

1/2cup salsa
1cup shredded cheddar cheese
1cup shredded Monterey Jack cheese

Instructions
Preheat the oven and prepare the baking sheet: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Cook the beef filling: In a skillet, sauté the onion in olive oil until soft. Add garlic, ground beef, and seasonings. Cook until browned, then stir in salsa. Remove from heat and cool slightly before adding cheeses.
Assemble the chimichangas: Warm tortillas, spoon beef mixture onto each, fold the sides, then roll up tightly. Place seam-side down on the baking sheet.
Bake the chimichangas: Lightly spray or brush with oil and bake for 20–25 minutes until crispy and golden.
