  • 10 small corn tortillas
  • 1 1/2 cups refried beans (canned or homemade)
  • 1 1/2 cups shredded Mexican blend cheese or cheddar cheese
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • Salt to taste
  • Vegetable oil for brushing or spraying

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C).
  2. Prepare tortillas: Warm the tortillas in the microwave wrapped in a damp paper towel for 30–45 seconds to make them pliable.
  3. Prepare bean mixture: In a bowl, mix the refried beans with cumin, garlic powder, chili powder, and a pinch of salt.
  4. Fill tortillas: Spread 2–3 tablespoons of the bean mixture across the center of each tortilla, then sprinkle with shredded cheese.
  5. Roll taquitos: Roll each tortilla tightly and place seam side down on a parchment-lined baking sheet.
  6. Brush with oil: Lightly brush or spray the tops with vegetable oil.
  7. Bake: Bake for 15–20 minutes or until golden and crispy.
