Ingredients

Corn Tostada Shells:

8–10 shells

Shredded Cooked Chicken:

about 3 cups

Barbecue Sauce:

3/4 cup plus extra for drizzle

Refried Beans:

1¼ cups

Shredded Cheddar or Mexican‑blend Cheese:

1½ cups

Chopped Red Onion:

¼ cup

Shredded Lettuce or Cabbage:

1 cup

Diced Tomato or Pineapple (optional):

½ cup

Sour Cream or Crema (for topping)

Chopped Cilantro or Green Onion (for garnish)

Salt and Pepper to taste

Optional Lime Wedges

Instructions

  1. Preheat oven to 400 °F. Lightly toast tortillas to crisp (brush with a little oil and bake or fry until golden).
  2. In a bowl, toss shredded chicken with barbecue sauce until well coated.
  3. Spread a thin layer of refried beans on each crisp shell.
  4. Top beans with a portion of BBQ chicken, then sprinkle evenly with cheese.
  5. Return to oven briefly to melt cheese.
  6. Remove and top with red onion, lettuce or cabbage, diced tomato or pineapple, and a drizzle of sour cream or crema.
  7. Finish with cilantro garnish and a squeeze of lime if desired.
  8. Season to taste.
