Shredded BBQ Chicken:

  • 2 cups cooked shredded chicken
  • 1/2 cup barbecue sauce

Grilled Cheese:

  • 8 slices sourdough or hearty sandwich bread
  • 2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • 1/4 cup red onion, thinly sliced (optional)
  • 2 tablespoons butter, softened
  • pickled jalapeños or fresh cilantro for garnish (optional)

Instructions

  1. Prepare BBQ Chicken: In a medium bowl, mix shredded chicken with barbecue sauce until well coated.
  2. Assemble Sandwiches: Heat a skillet or griddle over medium heat. Butter one side of each bread slice. Place four slices, buttered side down, on the skillet. Layer each with 1/4 cup cheese, a scoop of BBQ chicken, optional red onion, another 1/4 cup cheese, and top with the remaining bread slices, buttered side up.
  3. Cook: Cook for 3–4 minutes per side, pressing gently with a spatula, until golden brown and cheese is melted.
