Units Scale

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Other Ingredients:

  • 1/2 cup cold unsalted butter (cut into small cubes)
  • 2/3 cup heavy cream (plus more for brushing)
  • 1 large egg
  • 1 teaspoon vanilla extract (optional)
  • Add-ins of choice (1/2 to 1 cup total: berries, chocolate chips, dried fruit, nuts, citrus zest, etc.)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Incorporate butter: Add the cold butter and cut it into the dry ingredients until the mixture resembles coarse crumbs.
  4. Combine wet ingredients: In a small bowl, whisk together the cream, egg, and vanilla extract. Pour into the dry ingredients and stir until just combined.
  5. Add mix-ins: Fold in your desired add-ins gently.
  6. Knead and shape: Turn the dough out onto a floured surface, knead, pat into a circle, and cut into wedges.
  7. Bake: Place scones on the baking sheet, brush with cream, sprinkle with sugar, and bake for 18–22 minutes until golden brown.
  8. Serve: Cool slightly before serving.

Notes

  • For savory scones, reduce sugar and use mix-ins like cheese, herbs, or bacon.
  • The dough can be made ahead and chilled overnight before baking.
