1 medium head cauliflower, chopped into florets
2 large eggs
1/3cup all-purpose flour
1/4cup grated Parmesan cheese
2 green onions, finely chopped
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
2 tablespoons chopped fresh parsley (optional)
olive oil or vegetable oil for frying
Instructions
Prepare Cauliflower: Steam or boil the cauliflower florets until tender, about 8–10 minutes. Drain and let cool slightly, then mash with a fork or potato masher until mostly smooth with some small chunks.
Mix Ingredients: In a large mixing bowl, combine the mashed cauliflower with eggs, flour, Parmesan cheese, green onions, garlic, salt, pepper, and paprika. Stir until a thick batter forms.
Fry Fritters: Heat a thin layer of oil in a large nonstick skillet over medium heat. Scoop about 2 tablespoons of the mixture for each fritter and flatten slightly in the pan. Cook for 3–4 minutes per side or until golden brown and crispy.
Serve: Transfer to a paper towel–lined plate to drain excess oil. Serve warm, garnished with parsley if desired.
Notes
You can substitute almond flour to make it gluten-free.
Serve with sour cream, Greek yogurt, or your favorite dipping sauce.
