1lb boneless, skinless chicken breast, diced
2 tbsp soy sauce
1 tbsp cornstarch
1 tsp sesame oil
1/2 tsp black pepper
For the Fried Rice:
3cups cooked white rice, chilled
2 eggs, beaten
1cup mixed vegetables (peas, carrots, corn)
3 green onions, chopped
3 cloves garlic, minced
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp sriracha sauce
2 tbsp vegetable oil
Salt and pepper to taste
Instructions
Marinate the Chicken: In a bowl, combine diced chicken with soy sauce, cornstarch, sesame oil, and black pepper. Let marinate for 15-20 minutes.
Stir-Fry the Chicken: Heat a large pan or wok over medium-high heat. Add vegetable oil and stir-fry the marinated chicken until cooked through. Remove from the pan and set aside.
Cook the Vegetables: In the same pan, stir-fry garlic, mixed vegetables, and green onions until tender.
Prepare the Rice: Push the vegetables to the side of the pan and add beaten eggs. Scramble the eggs until cooked, then mix with the vegetables.
Add Rice and Sauce: Add chilled rice to the pan along with soy sauce, oyster sauce, and sriracha. Stir well to combine.
Combine Chicken and Rice: Return the cooked chicken to the pan and mix everything together. Season with salt and pepper to taste.
