  • 3 cups cooked white rice, chilled
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sriracha sauce
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Marinate the Chicken: In a bowl, combine diced chicken with soy sauce, cornstarch, sesame oil, and black pepper. Let marinate for 15-20 minutes.
  2. Stir-Fry the Chicken: Heat a large pan or wok over medium-high heat. Add vegetable oil and stir-fry the marinated chicken until cooked through. Remove from the pan and set aside.
  3. Cook the Vegetables: In the same pan, stir-fry garlic, mixed vegetables, and green onions until tender.
  4. Prepare the Rice: Push the vegetables to the side of the pan and add beaten eggs. Scramble the eggs until cooked, then mix with the vegetables.
  5. Add Rice and Sauce: Add chilled rice to the pan along with soy sauce, oyster sauce, and sriracha. Stir well to combine.
  6. Combine Chicken and Rice: Return the cooked chicken to the pan and mix everything together. Season with salt and pepper to taste.
  7. Serve: Garnish with additional chopped green onions and a drizzle of sriracha, if desired. Enjoy hot!
