Bread:

  • 1 cup mashed ripe banana (about 2 bananas)
  • 1 cup grated zucchini (moisture lightly squeezed out)
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and grease a 9×5-inch loaf pan.
  2. Mix wet ingredients: In a large bowl, whisk together the mashed banana, grated zucchini, eggs, oil, sugars, and vanilla until well combined.
  3. Combine dry ingredients: In a separate bowl, whisk the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Combine wet and dry: Add the dry ingredients to the wet mixture and stir until just combined. Fold in walnuts or chocolate chips if using.
  5. Bake: Pour the batter into the prepared pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
