For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter (melted)

For the filling:

  • 3 (8-ounce) packages cream cheese (softened)
  • 1 cup mashed ripe bananas (about 2 medium)
  • 3/4 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup sour cream

For the topping:

  • 1/2 cup caramel sauce (store-bought or homemade)
  • 1/2 cup chopped toasted pecans or walnuts
  • sliced banana (for garnish, optional)

Instructions

  1. Preheat oven to 325°F (163°C). Line the bottom of a 9-inch springform pan with parchment paper and lightly grease the sides.
  2. Mix graham cracker crumbs, sugar, and melted butter until combined. Press into the pan and bake for 10 minutes.
  3. Beat cream cheese until smooth. Add bananas, brown sugar, eggs, vanilla, cinnamon, and sour cream. Mix until smooth.
  4. Pour filling over crust and bake for 55–65 minutes. Cool in the oven, then chill for at least 4 hours.
  5. Drizzle with caramel sauce, sprinkle with nuts, and garnish with banana slices before serving.

Notes

  • For best results, use very ripe bananas.
  • If making ahead, add banana slices just before serving to prevent browning.
