Graham Cracker Crust:
2cups graham cracker crumbs
1/2cup unsalted butter, melted
Cheesecake Filling:
3 packages (8 oz each) cream cheese, softened
1cup granulated sugar
3 large eggs
1cup mashed ripe bananas (about 2 medium bananas)
1/4cup sour cream
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2cup chopped pecans or walnuts
1/2cup caramel sauce, plus more for topping
Whipped cream for serving (optional)
Instructions
Preheat Oven: Preheat oven to 325°F (163°C).
Prepare Crust: Combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan and bake for 10 minutes. Set aside to cool.
Make Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in bananas, sour cream, vanilla, cinnamon, salt. Fold in nuts and caramel.
Bake: Pour filling into crust and bake for 60–70 minutes until just set. Cool in oven, then refrigerate for at least 4 hours.
