  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 ripe banana, mashed (about 1/2 cup)

Optional Add-Ins:

  • 1/2 cup chopped walnuts
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add wet ingredients: Beat in the egg, vanilla extract, and mashed banana until well combined.
  4. Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Combine wet and dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Add optional add-ins: Fold in the walnuts and/or chocolate chips if using.
  7. Bake: Drop tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10–12 minutes, or until the edges are lightly golden and the centers are set.
  8. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
