Banana Bread Cake with Cream Cheese Frosting

  • 1 1/2 cups mashed ripe bananas (about 3 large bananas)
  • 2 teaspoons lemon juice
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened (for frosting)
  • 23 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a small bowl, mix mashed bananas with lemon juice and set aside.
  3. In another bowl, whisk together flour, baking soda, and salt.
  4. In a large bowl, cream 3/4 cup butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  5. Mix in the flour mixture alternately with the buttermilk. Fold in the banana mixture.
  6. Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted in center comes out clean.
  7. Allow to cool completely in the pan before frosting.
  8. For the frosting, beat cream cheese and 1/4 cup butter until smooth. Add vanilla, then gradually beat in powdered sugar until desired consistency is reached.
  9. Spread the cream cheese frosting evenly over the cooled cake. Slice and serve.
