For the Cake:
3 ripe bananas, mashed
1/2cup unsalted butter, softened
1cup granulated sugar
1/2cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1/2cup sour cream
2cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
For the Frosting:
8oz cream cheese, softened
1/4cup unsalted butter, softened
3cups powdered sugar
1 teaspoon vanilla extract
2 tablespoons milk
Instructions
Preheat oven and prepare pan: Preheat oven to 350°F (175°C) and grease/flour a 9×13-inch baking pan.
Mix wet ingredients: Cream butter and sugars, add eggs, vanilla, and mashed bananas. Stir in sour cream.
Combine dry ingredients: In a separate bowl, whisk flour, baking soda, baking powder, salt, and cinnamon.
Combine wet and dry: Gradually add dry mix to wet mix until just combined. Pour batter into pan.
Bake: Bake for 30-35 minutes until a toothpick comes out clean. Cool cake.
Make frosting: Beat cream cheese and butter, add powdered sugar, vanilla, and milk. Frost cake and refrigerate.
