For the banana bread bites:

  • 2 ripe bananas (mashed)
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter (melted)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a mini muffin tin.
  2. Prepare the batter: In a bowl, mix mashed bananas, sugars, melted butter, egg, and vanilla. In another bowl, combine flour, baking soda, salt, and cinnamon. Combine wet and dry ingredients, then fold in nuts.
  3. Bake: Fill mini muffin tin with batter and bake for 12–15 minutes until done. Cool before serving.
