Balsamic Roasted Baby Carrots

A simple yet flavorful side dish made with tender baby carrots roasted in balsamic vinegar and honey, creating a perfect balance of sweetness and tang.

Ingredients

  • 1 lb baby carrots
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • Salt, to taste
  • Pepper, to taste
  • Fresh thyme or rosemary, optional

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the baby carrots, if necessary, and pat them dry with a towel.
  3. In a large mixing bowl, combine the olive oil, balsamic vinegar, honey, salt, and pepper.
  4. Add the carrots to the bowl and toss until they are well-coated with the balsamic mixture.
  5. Transfer the carrots to a baking sheet in a single layer.
  6. Roast the carrots for 25-30 minutes, stirring halfway through, until they are tender and caramelized.
  7. If desired, sprinkle with fresh thyme or rosemary before serving.

Notes

  • For extra caramelization, you can broil the carrots for 2-3 minutes at the end of roasting.
  • Feel free to add garlic or other herbs for additional flavor.
