1lb baby carrots
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tbsp honey
Salt, to taste
Pepper, to taste
Fresh thyme or rosemary, optional
Instructions
Preheat the oven to 400°F (200°C).
Wash and peel the baby carrots, if necessary, and pat them dry with a towel.
In a large mixing bowl, combine the olive oil, balsamic vinegar, honey, salt, and pepper.
Add the carrots to the bowl and toss until they are well-coated with the balsamic mixture.
Transfer the carrots to a baking sheet in a single layer.
Roast the carrots for 25-30 minutes, stirring halfway through, until they are tender and caramelized.
If desired, sprinkle with fresh thyme or rosemary before serving.
Notes
For extra caramelization, you can broil the carrots for 2-3 minutes at the end of roasting.
Feel free to add garlic or other herbs for additional flavor.
