- 1 lb baby carrots
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- Salt, to taste
- Pepper, to taste
- Fresh thyme or rosemary, optional
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and peel the baby carrots, if necessary, and pat them dry with a towel.
- In a large mixing bowl, combine the olive oil, balsamic vinegar, honey, salt, and pepper.
- Add the carrots to the bowl and toss until they are well-coated with the balsamic mixture.
- Transfer the carrots to a baking sheet in a single layer.
- Roast the carrots for 25-30 minutes, stirring halfway through, until they are tender and caramelized.
- If desired, sprinkle with fresh thyme or rosemary before serving.
Notes
- For extra caramelization, you can broil the carrots for 2-3 minutes at the end of roasting.
- Feel free to add garlic or other herbs for additional flavor.
