- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 cup spinach leaves
- 1/2 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with paprika, garlic powder, salt, and pepper.
- In a large oven-safe skillet, heat olive oil over medium heat and sear the chicken for 3-4 minutes on each side until golden.
- Remove chicken and set aside. In the same skillet, sauté garlic until fragrant.
- Add heavy cream, Parmesan cheese, and Italian seasoning. Stir and simmer until slightly thickened.
- Stir in spinach and sun-dried tomatoes until the spinach wilts.
- Return chicken to the skillet, spoon sauce over the top, and transfer to the oven.
- Bake for 20-25 minutes or until the chicken is cooked through.
- Serve hot, spooning extra sauce over the chicken.

- Use fresh spinach for best texture and flavor.
- For a lighter version, substitute half-and-half for heavy cream.
- Serve with pasta, rice, or crusty bread to soak up the sauce.
