  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Sauce:

  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups fresh baby spinach
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F.
  2. Prepare Chicken: Rub chicken breasts with olive oil, Italian seasoning, garlic powder, salt, and pepper.
  3. Sear Chicken: Heat a skillet, sear chicken on both sides until golden but not cooked through. Set aside.
  4. Make Sauce: In the same skillet, sauté garlic in butter. Add tomatoes, cook until softened. Stir in cream and Parmesan, then add spinach.
  5. Bake: Return chicken to skillet, spoon sauce over it. Bake for 18–22 minutes until chicken is cooked through.
