Potato Skins:

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Toppings:

  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • Sour cream for serving

Instructions

  1. Preheat Oven: Preheat oven to 400°F (204°C).
  2. Prepare Potatoes: Scrub potatoes clean, prick with a fork, and bake for 45–50 minutes until tender. Let cool, then scoop out most of the flesh.
  3. Crisp Skins: Brush skins with oil, season, bake, fill with cheese and bacon, and bake until cheese melts.
