Potato Skins:
4 medium russet potatoes
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Toppings:
1cup shredded cheddar cheese
1/2cup cooked and crumbled bacon

Instructions
Preheat Oven: Preheat oven to 400°F (204°C).
Prepare Potatoes: Scrub potatoes clean, prick with a fork, and bake for 45–50 minutes until tender. Let cool, then scoop out most of the flesh.
