4 salmon fillets (about 6 oz each)
1cup pineapple chunks (fresh or canned)
1/4cup soy sauce
2 tablespoons honey
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1 tablespoon lime juice
Salt and pepper to taste
2 tablespoons chopped fresh cilantro (optional, for garnish)
Instructions
Preheat the oven to 375°F (190°C).
In a small bowl, whisk together soy sauce, honey, olive oil, garlic, ginger, and lime juice.
Place the salmon fillets in a baking dish and season with salt and pepper.
Arrange pineapple chunks around and on top of the salmon.
Pour the soy-honey mixture evenly over the salmon and pineapple.
Bake for 18-20 minutes, or until the salmon flakes easily with a fork.
Garnish with chopped fresh cilantro if desired before serving.
Notes
For a spicier version, add a pinch of red pepper flakes to the marinade.
Serve with rice or quinoa for a complete meal.
You can substitute maple syrup for honey if preferred.
