Baked Pineapple Salmon is a flavorful and healthy dish that pairs the richness of salmon with the tropical sweetness of pineapple, baked to perfection with a savory glaze.

  • 4 salmon fillets (about 6 oz each)
  • 1 cup pineapple chunks (fresh or canned)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh cilantro (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, whisk together soy sauce, honey, olive oil, garlic, ginger, and lime juice.
  3. Place the salmon fillets in a baking dish and season with salt and pepper.
  4. Arrange pineapple chunks around and on top of the salmon.
  5. Pour the soy-honey mixture evenly over the salmon and pineapple.
  6. Bake for 18-20 minutes, or until the salmon flakes easily with a fork.
  7. Garnish with chopped fresh cilantro if desired before serving.

Notes

  • For a spicier version, add a pinch of red pepper flakes to the marinade.
  • Serve with rice or quinoa for a complete meal.
  • You can substitute maple syrup for honey if preferred.
