For the Baked Orzo Pasta:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 1/2 cups uncooked orzo pasta
  • 1 can (14.5 ounces) diced tomatoes
  • 3 cups vegetable or chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat oven: Preheat the oven to 375°F (190°C).
  2. Saute vegetables: In a large oven-safe skillet, heat olive oil over medium heat. Add onion, garlic, bell pepper, and zucchini. Cook for 5 minutes until softened.
  3. Add orzo and seasonings: Stir in orzo pasta and cook for 1–2 minutes to lightly toast. Add diced tomatoes, broth, oregano, basil, salt, and pepper. Bring to a simmer.
  4. Bake: Cover the skillet and transfer it to the oven. Bake for 20–25 minutes until orzo is tender and liquid is absorbed.
  5. Add cheese: Remove from the oven, sprinkle with mozzarella and Parmesan. Return to the oven uncovered for 5 minutes until cheese is melted.
  6. Serve: Garnish with fresh basil before serving.

Notes

  • You can add cooked chicken, sausage, or shrimp for extra protein.
  • For a creamier version, stir in 1/4 cup heavy cream before baking.
